Chickpea Burgers

Our first official recipe, of course, must deal with the garbanzo bean. Tonight, after a long day, I decided to give this quick recipe a try. I found this recipe online this weekend (while actually looking for new vegetarian pizza recipes) and thought it would be a great recipe to try during the middle of a work week.

This recipe was super easy - I basically threw everything in our Magic Bullet, blended it, formed the mixture into little patties and cooked them on the stovetop. The mixture was more moist and messy than I thought it would be, but it cooked up really nicely. The patties stayed together and they had a good consistency. Next time, I would add more seasoning and I am going to make a tzatziki sauce to dress my sandwich with. After all, accessories are always important - for proof, just look at my shoe collection. :)

Chickpea Burgers
Adapted from EatingWell

1 - 19 ounce can of chickpeas
1 egg
2 tablespoons all-purpose flour
1 tablespoon fresh, chopped oregano
1/2 teaspoon ground cumin (I added 1 teaspoon)
1/4 teaspoon salt
Ground black pepper (to your taste)
2 tablespoons extra-virgin olive oil
Whole wheat pitas
Feta cheese
Mixed greens

Place the chickpeas, egg, flour, and all seasonings inside a food processor (I used our Magic Bullet). Blend to a rough mixture that will hold a patty shape when pressed together.

Heat oil in a skillet over medium heat. Place the patties in the skillet and cook patties until golden and crisp, about 2-4 minutes on each side.

Prepare your pita by taking half of a whole wheat pita and filling it with a bit of feta cheese and mixed greens. Add a hot chickpea burger when finished.

Gaga For Garbanzos?

We love lots of things. We love wine. We love science. We love music. And yes, we certainly love garbanzo beans (the arguably fiercer name for chickpeas). In the past year, we have figured out that one of the things we like to do to relieve stress and entertain ourselves is to make new delicious food.

Our hope for this blog is that it helps to keep ourselves and others inspired to be adventurous in the kitchen and in life. We strive to think outside of the box, try new things and keep ourselves sane in the process. As pescatarians, we also strive to be healthy and utilize the best ingredients from local vendors and farmers as much as possible. Encouraging healthy living and support of local industry is important to us.

We hope that you enjoy the crazy, food-filled journey alongside us.
